Coconut Macaroons

Coconut Macaroon Magic!

Made these golden, chewy coconut macaroons with my little chef for his 5th grade project & bake sale.

Just 4 simple ingredients:

16 oz grated coconut (One bag)

1 can condensed milk

1 tsp vanilla extract

2 egg whites

  1. In a bowl mix the grated coconut with condensed milk and vanilla extract.

  2. In another bowl Whisk the egg whites ‘til stiff pick.

  3. Fold the fluffy egg whites into the coconut mixture.

  4. Line a sheet pan with nonstick parchment paper

  5. With an ice cream scooper line up scoops of the mixture leaving two inches in between.

  6. Bake for 25 minutes on a preheated oven at 350 degrees F until golden.

  7. Once cooled drizzle melted bitter sweet chocolate over them and let rest 10 minutes in the fridge.

  8. Melted Chocolate: Melt chocolate chips in mug in the microwave heating and mixing it up 30 seconds at a time.
