Easy 3-Ingredient Beer Bread (No-Yeast Dutch Oven Recipe)

Since I started baking my own bread, I haven’t bought a single loaf at the store! But as anyone who orders groceries online knows, item substitutions happen. When my regular flour was swapped for self-rising flour, I decided to do some kitchen research—and stumbled upon the easiest, fastest way to bake fresh bread without waiting for yeast to rise.

Self-rising flour already contains baking powder, so when you combine it with beer (which is packed with natural yeast), the dough grows beautifully fluffy and golden in the oven. I make mine with my beloved Puerto Rican beer, Medalla Light, for a subtle, delicious flavor.

Ingredients

  • 3½ cups self-rising flour (plus extra for dusting)

  • 2 tsp salt

  • 1 can or bottle (12 oz) beer (I love using Medalla Light!)

Instructions

1. Preheat the Oven & Dutch Oven

  • Place a covered Dutch Oven lined with parchment paper (or wax paper) into your cold oven. Preheat the oven to 450°F (232°C) so the pot gets blazing hot.

2. Mix the Dough

  • In a large mixing bowl, combine the self-rising flour, salt, and beer. Stir until a shaggy dough forms. (No kneading or resting needed!)

  • Lightly dust your hands and work surface with extra flour to bring the dough into a quick round loaf shape.

3. Bake Covered

  • Carefully remove the hot Dutch Oven from the oven and drop your dough directly into the center.

  • Cover with the lid and bake at 450°F for 30 minutes.

4. Uncover & Brown

  • Remove the lid and bake uncovered for an additional 30 minutes until the crust turns a deep, golden brown and sounds hollow when tapped.

5. Cool & Enjoy

  • Remove the loaf from the Dutch Oven and let it rest on a wire rack for at least 10 minutes before slicing.

  • Freezer-Friendly: Once your loaf is completely cooled, double-bag it in airtight freezer bags. You can freeze it for up to 3 months! Just thaw on the counter or toast individual slices directly from frozen.

  • Beer Choice: While Medalla Light gives a light, clean taste, feel free to experiment with amber ales, stouts, or non-alcoholic beers for different flavor profiles.
